At The Wild Walnut, we care passionately about creating the best tasting preserves in the country. This has been our craft since 1997 and although the café and catering arms have been added to the business, this has not diluted our passion for making first-class products.
Peter Bertam, founder of The Wild Walnut in its modern form, moved to New Zealand in 2003, following a lifetime of culinary involvement in various destinations across the globe. A true visionary, Peter saw the potential of the small town of Lawrence and his entrepreneurial attitude and unique outlook on life have shaped much of The Wild Walnut's philosophy. Although Peter passed away in 2005, his legacy lives on through Peter's daughter, Sue and her husband Jim.
The friendly warmth of the team, their delicious café style treats and tasty bottled preserves have cemented The Wild Walnut with its iconic, well-loved status in the community of Lawrence. The Wild Walnut is a 'must stop' destination on the itinerary if you are travelling in the Otago Region, especially near Dunedin, Alexandra, Balclutha, Queenstown, Wanaka, Oamaru, Invercargill or Gore.
Sue Bertram: Organiser - with her natural love of life and people, Sue is the bubbly hostess behind all of The Wild Walnut's operations. Committed to carrying on the business, following her Father's passing.
Jim Merrill: The Artisan - Jim learnt the art of preserving from Father-in-law, Peter and still to this day produces some of Peter's original recipes for The Wild Walnut, as well as developing plenty of his own. Jim personally handcrafts all of The Wild Walnut preserves and his dedication to producing innovative flavor combinations, has earned the brand its well-deserved reputation.
The team - Sue and Jim maintain that the people they work with play a huge role in the success of The Wild Walnut. Whether there for a short tenure or many years, staff become a part of The Wild Walnut family and are crucial to living and growing the brand, both within the local community and online.
